Sultana and Oat Biscuits

This is another recipe that I found in the Vegie Smugglers lunchbox ebook. These are great to make with kids because like muffins, there are no electric beaters, you just combine everything, mix and bake. There is lots of measuring, pouring and mixing which keeps little people involved. They also don’t take very long and are a little healthy… and very yummy! Even my sultana-despising husband enjoyed these.



1 cup self-raising flour

1⁄2 cup brown sugar

1⁄4 cup caster sugar (I would probably reduce this somewhat next time, maybe 1 or 2 tablespoons if any at all)

11⁄2 cups rolled oats

1⁄2 cup sultanas

1 egg

5 tbsp grapeseed oil

1 apple, grated

1 tsp vanilla extract


Preheat oven to 170C. Line 2 oven trays with baking paper

Sift the flour into a large bowl. Mix in the sugars, oats & sultanas.

In a separate bowl, combine the egg, oil, apple and vanilla. Mix into the dry ingredients. Dollop large spoonfuls onto the trays and bake for 15-20 minutes until golden. MAKES 18
